Smashed Pea Bruschetta
Smashed Peas on Toast
Not avocado but smashed peas on toast! Fresh and zingy flavours
Equipment
- 1 Small saucepan
- Toaster or grill
- 1 Potato masher
Ingredients
- 150 Grams Frozen peas or petit pois Cooked as per instructions
- 1 Tsp Garlic granules
- 1/2 Lemon
- 1/2 Tsp Salt
- 1 Tsp Ground black pepper
- 4-8 Slices Toast Depending on shape and size of bread
- Grated or crumbled cheese of choice Feta and parmesan go nicely with this.
Instructions
- Cook and drain the frozen peas.
- Mash the peas roughly leaving some texture to them.
- Mix in lemon juice and seasonings.
- Toast your slices of bread and add peas on top. I like to top with either crumbled feta or vegetarian Parmesan.
Notes
This goes perfectly as a side to pasta dishes instead of garlic bread. It can also be eaten as a starter, or just a snack!
