Smashed Pea Bruschetta

Smashed Peas on Toast

Not avocado but smashed peas on toast! Fresh and zingy flavours

Equipment

  • 1 Small saucepan
  • Toaster or grill
  • 1 Potato masher

Ingredients
  

  • 150 Grams Frozen peas or petit pois Cooked as per instructions
  • 1 Tsp Garlic granules
  • 1/2 Lemon
  • 1/2 Tsp Salt
  • 1 Tsp Ground black pepper
  • 4-8 Slices Toast Depending on shape and size of bread
  • Grated or crumbled cheese of choice Feta and parmesan go nicely with this.

Instructions
 

  • Cook and drain the frozen peas.
  • Mash the peas roughly leaving some texture to them.
  • Mix in lemon juice and seasonings.
  • Toast your slices of bread and add peas on top. I like to top with either crumbled feta or vegetarian Parmesan.

Notes

This goes perfectly as a side to pasta dishes instead of garlic bread. It can also be eaten as a starter, or just a snack!
